You will need:
- 1 lb large white mushrooms, cleaned and quartered
- 3-5 tablespoons olive oil
- 1/2 cup dry white wine
- 1 tablespoon coriander seeds
- 1-1 1/2 tablespoon fresh lemon juice
- salt (to taste)
- freshly ground black pepper (to taste)
- fresh parsley, for garnish (optional)
Step 1:
Place the olive oil in a large skillet over high heat.
Step 2:
Add the mushrooms and stir-fry for about 3 minutes (until the mushrooms appear to be cooked and glazed).
Step 3:
Add the white wine and coriander seeds. Stir and continue to cook for about 5 minutes (until most of the liquid has evaporated).
Step 4:
Add salt, pepper and lemon juice. Adjust to suit your taste. Stir and mix once more.
Step 5:
Serve garnished with fresh parsley (optional).
