You will need:
- 1/4 cup raisins
- 1/4 cup walnuts, chopped into coarse pieces
- 1/4 cup desiccated coconut
- 1 large egg
- 3/4 cup flour
- 1 teaspoon baking powder
- 1/3 cup powdered sugar
- 1/3 cup butter, softened
- 1/2 teaspoon vanilla essence
Step 1:
Preheat the oven to 325° F (160° C).
Step 2:
Cream the sugar and butter together.
Step 3:
Add the (slightly beaten) egg and vanilla essence.
Step 4:
Sift the flour and baking powder together.
Step 5:
Add the dessicated coconut, raisins and walnuts to the flour and mix with your hands.
Step 6:
Add this mixture to the butter and sugar mixture; fold gently.
Step 7:
Put spoonfuls of the batter 1 inch apart into a prepared (greased or covered with butter paper) baking tray and slightly flatten.
Step 8:
Bake for about 20 minutes (or until light golden brown).
Step 9:
Let cool for about 5 minutes, then take the cookies out of the tray and cool completely on a wire rack.
Step 10:
Store in an air tight container.
